We are getting a new oven, and in the current electrical situation is a 50 amp double breaker, with 3 wires going into the oven. The manufacturer of the new oven says that the connection must be 30 or 40 amp - is it a problem to use the existing connection that is 50 amp?

I would go with their ratings, Lets say something does go wrong with the oven, if the breaker is too big, the wires in the oven can burn and start a fire, with the smaller breaker, the breaker should trip before the wire burns.
